Learn to cook Japanese-style without compromising your vegan values at this special cooking school in Kanazawa
It's not always easy sticking to a vegan diet while travelling abroad. Fortunately our friends at a cooking school in Kanazawa understand veganism, and can adapt their cooking classes to suit you.
In a traditional machiya townhouse, your English speaking instructor will introduce you to Kanazawa-style cooking and the secrets of its most important ingredient: koji. Koji is a micro-organism used in popular Japanese seasonings such as miso, mirin, and soy sauce, and even sake.
After the explanation, it'll be time to get started on the cooking. You'll use fresh, seasonal ingredients for the healthy dishes you will make today, including vegetarian sushi rolls, a miso-marinated tofu dip that can be used as a mayonnaise. And of course once your creations are complete, you get to tuck in!
This class can be tailored to suit carnivores, pescetarians, vegetarians or vegans. Just let us know your dietary requirements in advance so we can pass this along to the instructors.
